Beyond Meatball Sub
Meatball subs are such a classic and comforting sandwich. We love using Beyond Meat to make large meatballs, simmer them in marinara sauce and melt vegan cheese on top.

We were so excited to hear Subway was getting a vegan meatball sub but we were sad to know that the marinara sauce was not gluten free. Their gluten free bread is also not vegan so if you're vegan and gluten free the only option is to get sauceless meatballs over a salad which was not ideal. To be honest the meatballs were not meatball sub worthy in size.
Luckily Beyond Meat is around so we can make our own! We also found an amazing gluten free vegan baguette by My Bread. We found it at our local Sprouts but you can also order it on their website. We used Daiya Mozzarella shreds but you can use your favorite vegan cheese on top. We made our own marinara sauce but you can use store bought.
INGREDIENTS:
Meatballs
2 Beyond Burger Patties
1 tsp Salt
1/4 tsp Pepper
1 Flax Eggs (1 Tbs Flax Meal + 2 Tbs Water)
1/2 tsp Garlic Powder
2 Tbs Vegan Cheese Shreds (we used Daiya mozzarella)
Sauce
1 can (15 oz) Tomato Sauce
1 tsp Fresh Rosemary (chopped)
1 tsp Fresh Basil (chopped)
1 tsp Fresh Thyme (destemmed)
1/2 tsp Garlic Powder
OR 15 oz Marinara Sauce
Other
2 Baguettes
2 Tbs Vegan Butter
2 Tbs Vegan cheese (we used Daiya mozzarella)
2 Tbs Fresh Parsley (chopped for garnish)
INSTRUCTIONS:
Make flax egg by mixing flax meal and water, set aside in fridge for about 5 min
Mix Beyond, salt, pepper, garlic powder, 2 Tbs vegan cheese and flax egg
Roll preferred size meatballs
In a pot add tomato sauce, rosemary, thyme and basil mix well
Bring to a boil, reduce to simmer
In pan add oil on medium heat and lightly cook the meatballs
Add meatballs to simmering tomato sauce, cover and cook for about 5 min
Cut baguettes but be careful not to cut all the way leaving it connected on one side
Spread vegan butter to bread and sprinkle vegan cheese over bread
Lightly toast in toaster oven/conventional oven
Add meatballs to baguette, sauce if you like and sprinkle cheese on top
Place in oven and bake at 400°F for 10 min
Garnish with fresh parsley and enjoy!
