Cheung Fun can be transformed into a variety of meals. Ranging from Cheung Fun rolls to Chow Fun noodles. You can buy store bought ones but they're always hard and compact it's hard to work with them or they end up falling into pieces. Never use store bought again and start enjoying fresh Cheung Fun!
This recipe makes A LOT so if you're planning to make a lot of things like chow fun noodles, rice rolls and stuffed cheung fun then make the whole recipe. Otherwise I'd recommend making a 1/2 batch. I like to put the extras in a jar and store in the fridge for later use. You can also cook this in the microwave. I'm going to show you how to do it by steaming it in a pan. I'll provide the microwave instructions at the very bottom as well.
You'll need to use a metal square or rectangular baking dish. I used a 7"x 7". I'd recommend using a rectangular one so you can roll it more times especially if you plan to make noodles or stuffed cheung fun.
3 cups Rice Flour
3/4 cups Cornstarch
6 cups Water
OPTIONAL: Chopped Green Onions
Add rice flour, cornstarch and water into a mixing bowl
Use a whisk to mix well
Get your metal baking dish use a brush to coat the bottom with oil
In a wok or large pan add about 2-3 cups of water
Add a shallow steaming rack, cover and bring to a boil
Add about 1/3 of a cup of the flour mixture to the baking dish (you want to have a thin layer that will cover the entire bottom)
Spread evenly to cover the entire dish
Optional: sprinkle chopped green onions on top
Now add the baking dish on top of the steam rack, be sure to use tongs or oven mitts so you don't burn your hands
Cover and allow to steam for 5 min
Remove baking dish and use a spatula to loosen the sides
Use a wide spatula if you have one a regular spatula will work as well to fold and roll the cheung fun
You can use your hands as well to make a tighter roll but not necessary
Optional: brush more oil over the top before rolling if you want to unroll them later one to make stuffed cheung fun or noodles for chow fun so they don't stick together
Repeat until you've finished all the four mixture or store any leftover in the fridge
Eat as rolls or use to make stuffed Cheung Fun or cut into noodles to make Chow Fun
For microwaving get a large microwavable plate, oil
Pour flour mixture, even out until if covers the entire plate
Put in microwave for 60 second
Use spatula to loosen edges
Use spatula to fold and roll
